Mango Sticky Rice Matcha Latte

1. The night before, give your rice a good rinse until the water runs mostly clear. Then place the drained rice in a bowl with the coconut milk. Cover the bowl and let it sit in the fridge overnight.
2. The next day, pour the soaked rice in a high speed blender with the water and blend on high until smooth. Pour through a sieve into the same bowl to catch any pulp (make sure there are no grains of rice left in the bowl).
3. Rinse out the blender container and add back the coconut-rice milk along with the mango, sugar and salt. Blend on high until smooth.
4. Prepare your matcha as you usually do. Add 2-3 tablespoons of the mango sticky rice syrup to the bottom of your serving glass. Top with ice, milk and the prepared matcha. Stir and enjoy!
