GIANT CLUSTER Pumpkin Spice Granola 🧡✨ Happy fall! I’m now at full liberty to post whatever pumpkin recipe I want and no one can say a thing about it 😌 I love fall, but I’m not a big fan of winter so I’ll be revelling in the autumnal vibes as much as I can. And that includes infusing everything I make with fall flavours, including this granola. Here’s the recipe: 1/4 cup coconut oil, melted 1/3 cup maple syrup 1/2 tsp vanilla 2 tsps pumpkin spice ½ tsp salt 2 cups rolled oats 2/3 cup raw pecans, roughly chopped 1/2 cup raw pumpkin seeds Optional 1/3 cup dried fruit like cranberries Preheat oven to 350F and line a baking sheet with a silicone mat or parchment paper. Combine coconut oil, maple syrup, vanilla, pumpkin spice, and salt in a large bowl. Stir in oats, pecans and pumpkin seeds. Pour mixture onto a baking sheet and spread into one even layer. Place in the oven for 24-27 minutes or until golden brown. Do not stir halfway if you want large clusters. Remove from the oven and let cool completely. Then break the sheet of granola into clusters. If you are adding dried fruit, now is the time to stir it in. Serve however you want, I love it on top of smoothie bowls, coconut yogurt, or even on its own with some almond milk. Enjoy! #pumpkinspice #granola #fallrecipes #veganrecipes #plantbased
