Chocolate Chip Cookies

Prepare vegan egg according to package directions. Cream together margarine and both sugars until smooth and creamy. Add vegan egg and vanilla extract to margarine-sugar mixture and whisk to combine. Add cinnamon and salt, and whisk to combine. Add flour, baking powder and baking soda, and fold in with a silicone spatula. Stir in chocolate. Scoop and roll 1-2 tbsp of cookie dough per cookie into a ball and place on a baking sheet lined with parchment paper (I typically do 2 batches, 6 per batch). Place cookies in the freezer for 15-30 mins, along with the rest of the dough. Preheat oven to 350 degrees. Once heated, bake cookies for 14 minutes, or until they are slightly golden brown. Remove from oven and allow to cool on tray for 10 minutes. Transfer to a wire rack, and allow to cool for another 10 minutes. Enjoy!
